Birthday parties | Whenever we go to birthday parties, the kiddies know they can eat the fruit and veggies, and I take a few other treats for them, including a cupcake. We had a party to go to last weekend, so I whipped up these chocolate cupcakes (recipe from @wellnourished ) and made some chocolate coconut icing to go with them (I adapted the icing from another recipe - it’s just desiccated coconut, coconut cream, vanilla, cacao, and coconut oil). The kiddies loved them (I may have taste-tested one too!) and I was satisfied knowing that they only had a little honey in them as well as beetroot, zucchini and carrot, so they were practically healthy, right?! There are no words 🤤💕 I tried two of the places on my checklist yesterday; Beyond Bread AND @yoricamoments! A gluten, dairy, egg and nut free vanilla frozen yoghurt (fro-yo) topped with a 'jammy dodger' biscuit, gummy hearts and coconut chips. They also give you unlimited, free sprinkles for after 💆 if you're wondering how this tasted then JUST LOOK AT IT 😍 I was shell-shocked to discover they only had one existing branch at the moment in Wardour Street. They should totally open up more around London and the UK, who else agrees that this would make the world a better place? 🤣🌍
Little chickpea choc chip cake squares: gluten free, dairy free, refined sugar free ( even the @colessupermarkets vegan dark choc I've used is super duper low total sugars and reduced fat), egg free, nut free, vegan blah blah blah 😊. These have got to be the best dai-di-ku you can possibly buy in Taiwan. Made by a 80 years old ooh-ba-san (grandma) who married to a Japanese man. These are freshly handmade every day with all natural and basic ingredients. Prepackaged mochi in plastic bag and cardboard box doesn’t even come close.
We had 6 flavors, black and white sesame, sakura(cherry blossom), daizuko(soybean powder), plain. There are a lot more mochi varieties in her store!
So I've stepped up my game with these chocolate muffins!😍🍫They are vegan, gluten free, sugar free, nut free (depending on the type of flour) and Paleo! 🙌🏻And of course, healthy and guilt free! Not to mention, that they taste amazing! 👌🏻This recipe was inspired by many of @feastingonfruit recipes, they're amazing!!🤤Anywayy
Recipe: (makes 6)
1/2 cups almond or oat flour
2 tbsp tapioca flour
1/4 cup cocao powder
2 tbsp organic stevia
1 tbsp baking powder
A pinch of pink salt
1 cup of coconut yoghurt
1/4 cup of almond milk
1 tsp vanilla extract
Combine all ingredients and scoop into a cupcake pan, bake at 180 degrees celcius or 350F for about half an hour and enjoy!🙈I topped mine with a little bit of coconut yoghurt and some strawberries😊🍓 Have a good day/night everyone!💕

4 days it took in Brissy’s winter to ferment this jar of apple sauce to fizzy apple mousse! To make, throw apple halves into a slow cooker adding just enough water to cover the base. Cover and allow to cook on low for 4- 6hours or until soft and puréed. Transfer into glass jars ie recycled GUTSY jars and fill it to 3/4 full. Allow to cool to room temperature. Once cooled, add 1/4 cup water kefir or kombucha to the apple sauce. Stir to combine well. Lid tightly and allow to ferment at room temperature for 4-5 days or until bubbly. Open over a bowl ‘cos it’s going to be bubbly! Enjoy it with a dollop of cultured cream or pouring cream. Alot of hot drinks are being made with nuts now..they contain Lectins and need to be soaked as well as having enzyme inhibitors.. Alot of nut eaters get coldsores..basically an imbalance in aminos in the mouth..ulcers as well. This drink is awesome will be making it for packs as well...Awesome!

This little man had his yearly visit to the immunologist this morning. I was dreading it a bit to be honest- this would be the first year that he would understand what was happening and be able to object and remember- but he was absolutely amazing. 14 skin pricks and he took it all in his stride. And the even better news is that his reaction to tree nuts has lessened so we are booking in for an in-hospital food challenge for mixed nuts soon. I am so grateful to our immunologist and the team who take such good care of us- it makes a world of difference knowing we’re in such safe and caring hands.
