Where'd the days go? When all we did was play
And the stress that we were under wasn't stress at all
Lately I’ve been struggling with food. And if you know me, I LOVE food. Especially going out to dinner. Just ask my parents and my closest friends. Growing up, I always looked forward to Friday nights because we would go out to dinner. .
Since moving to Connecticut, food just hasn’t been the same for me. When going out to eat, my stomach hurts after most of the food and I am frequently disappointed. It’s hard to find a place (around me) with good quality, fresh food that doesn’t cost a fortune. .
Don’t get me wrong, where I grew up wasn’t perfect. And I know that there are some great affordable restaurants in CT but I just haven’t found them. .
Since coming to this realization I have decided to turn my kitchen into a restaurant (especially since my husband is a great cook!).
We now make our own pizzas, Chinese food, tacos and guac, pasta sauce, soups, and lots of delicious, fresh salads. .
I’ve been getting sick of our usuals so I have been trying to find and think of more options to add to our menu. .
Last week I made tikka masala. It was good but we have some perfecting to do before it becomes a favorite. .
As I’ve continued to think, I began thinking about all my favorite restaurants from growing up and the meals that I miss. Greek…I miss Aladdin’s! So, this week I am going to make Greek turnkey burgers. .
Today I have the day off of work and at lunch time I began searching the fridge for what I was going to have for lunch. The Tzatziki sauce and Kalamata olives were staring me in the face. .
My wheels began spinning and I had a great idea. I should use the left over chicken from last nights dinner and make a salad with the Tzatziki sauce and Kalamata olives. .
What a refreshing tasting salad! So delish and a nice change! .
Crossing my fingers that I can keep the wheels spinning and continue to add to our menu. .

It’s been a hot minute since I’ve posted so I’ll keep it sweet. Moving down South was a redic adventure. I had a game plan but God chuckled as he closed doors and opened others. I wanted to polish skills, learn and grow as I surrounded myself with some of the best in the field. The beach being 2 shakes away isn’t shabby either. •
I’m still settling in and have shown grit in awkward situations I knew would be part of the journey. I found a place to do personal training, to do stretch, to do group ex, to learn from physical therapists, and an opportunity to intern under an amazing strength coach who’s a celebrity in my field and presents to multiple venues like Perform Better. Acro will be stirred in shortly once I figure out traffic flows 😩
I wrap up with mentioning I’ve been missing home because the people I left there are beyond words amazing. I’ll be visiting soon and sharing what I have learned soon. •
