I'm still alive guys! I've been so MIA lately unplugging and enjoying family time. I went off keto on Saturday unintentually we were drinking on the boat and I left my bag of snacks on our friends boat so I had none of my food. Didn't go crazy I had breaded chicken wings with barbeque and chips and salsa...I'm up 2 lbs but today is day 2 back on keto, feeling bloated and sluggish and I can honestly say I feel terrible when I eat carbs so keto is officially a lifestyle change for me. We all have slip ups I don't do cheat meals I try my best to stay keto some days it doesn't work out and that's ok. Happy new week! I saw this on Saturday or so and just remembered to share it. A lot of our children are looking like this “before” image nowadays and it’s not ok. A lot of times we decide to do something about our weight but we leave the family out because we don’t see their weights as a problem. Most parents who are overweight due to bad eating habits also have children who are overweight so don’t make it only about you, get them involved and with children it’s not even that hard, just take the bad foods away. I was thinking today back in boarding school, we were served something called Okpa with Pap at breakfast and not cereals and we thrived well. Start with real foods and you’ll see a change. Doing this for them now when they are still under your care is is very important otherwise they will grow up and only get bigger and it gets difficult. This is a huge difference in just 4 months. I could just die of how proud I am of my daughter. 😭 I remember when we first started keto almost 4 months ago, her weight just wasn’t dropping. But here we are 21lbs down as of today. 🙌🏻 We talked about dropping 20lbs before she starts middle school. She exceed that goal & we still have more then a week before school starts up again. This wasn’t a breeze for her, she had temptations along the way but remained so strong. I could sit here and write a whole book on how she inspires me but I’ll just let her picture do the talking. 😭🤧❤️ So thankful to have found keto and such an awesome community that supports us each & everyday. ❤️

My final dish of the day is a Raspberry Cheesecake Stack. Judges?
What you’ll need:
- 4oz cream cheese, softened
- 4T heavy cream
- 2T Kerrygold (unsalted), softened
- 1T coconut oil, melted
- 1/4c Torani SF Raspberry Syrup - 1T Swerve confectioners (opt.)
- 1t gelatin (or else it won’t firm up 😅)
- 1.5 Smuckers Sugar Free Raspberry*
💥993 calories, 106g fat, and ~5.2 total carbs💥 Note: I’m eating these heavy desserts to meet my macros. You can divide them to last a few days...or not.
Combine cream cheese, butter, oil, HWC and Swerve. Let rest. In a microwave safe cup, pour in 2T of water and heat for 30 seconds; add gelatin to dissolve then pour batter. Add syrup and continue to mix until smooth. In a 9in loaf pan (silicone would be best), add batter then place in freezer for about 45-60 minutes. Once firm, you can slice and top with jam.
*If you have a thing against Splenda, even at this amount, you can be fancy and make your own to avoid this sugar substitute.
