Not sure why I'm trying....walked an hour to work today, took my meds, had a granola bar for breakfast, a small serving of cauliflower and chick peas for lunch, and my sugars were still between 13 and 16 all day. I never did post this recipe. Last weekend I had made oatmeal protein bars (recipe posted earlier) and these no bake chocolate chip cookie dough bars. .
They're good but the oatmeal cookies were the big win in our household. It was my first time making a recipe with coconut flour. The consistency is something to get used to, but beyond that they were good! Definitely a healthy treat that my husband had no problem snacking on 😁

INGREDIENTS
1/2 cup + 2 tablespoons coconut flour, sifted
1/2 cup mashed banana
1/4 cup peanut butter
1/4 cup honey or maple syrup
1/2 teaspoon vanilla
2 tablespoons mini chocolate chips
⠀⠀
INSTRUCTIONS
1. Line an 8×4 loaf pan with parchment paper.
2. In a large bowl, mash the banana, add peanut butter, honey, and vanilla. Once the mixture is cohesive and creamy, add in the coconut flour and combine well. The final step is to add in chocolate chips and combine.
3. Spread mixture into a lined pan with your hands, pressing down and spreading evenly, to about 1/2 thick. Refrigerate for 1-2 hours until firm.
4. Picking up the parchment paper, remove from pan and cut into individual squares.
5. You can wrap them individually or in an airtight container and refrigerate them for a week. They can also be wrapped individually and frozen for up to a month.

1. Poner las nueces en el procesador de alimentos, licuadora, thermomix, el que tengas y bate durante unos segundos hasta que estén desmenuzadas.
2. Añade los dátiles (sin hueso) y el cacao. Vuelve a batir hasta obtener la consistencia perfecta.
3. Haz bolitas con tus manos. (Super actividad con los niños)
4. Guarda las trufas en un recipiente hermético a temperatura ambiente o en la nevera.

Puedes usar los frutos secos que quieras, en esta ocasión yo usé nueces, pero también quedan muy ricas con almendras y avellanas, te recomiendo que uses frutos secos crudos y sin sal, que no estén fritos y que no lleven aceites ni aditivos.

You guys are always asking about proteins snacks.... I make these often so that they are ready to grab out of the fridge when I’m in a rush.
~Deviled eggs~
Take all the egg yolks out, put them in a bowl and discard 1/3 of them. Mix in mustard, a splash of red wine vinegar, salt, pepper and add Greek yogurt as the “mayonnaise” til you get the right consistency.

Put the yolk mixture in a baggie, cut off a corner and squeeze back into the egg white.
•
Smoked paprika on top with a piece of turkey bacon.
