GYM WORKOUT COMPLETE! I am not one to workout at the gym for a few reasons. .
With two kiddos...there’s just no time! .
It scares me and the anxiety of people looking at me shuts me down because I often feel lost when doing a weight lifting program. .
I love the idea that I can bring my trainer along with the ease of my computer. .
I’m currently in week 6 of my lifting program. So unless I want to put my workout on hold until we get back home...I had to face my fear. .

Smoothie bowls are about as easy as they get.  Just throw everything in a blender and mix it up! That being said, sometimes super fun weekends like that through my digestion off a bit (you can search “listening to my gut” on the blog to read more details about that story) and I need to “tighten things up” and eat lower FODMAP foods that I know my sensitive tummy can handle. .
SO thankful for @fodyfoods and their flavorful seasonings, sauces, and snacks because now even when I need to adjust the foods I eat, I feel good AND my food tastes even better...seriously.  This MAPLE DIJON SALMON will absolutely be making an appearance this week 😍 (clickable link in profile)

My Sunday was renamed SERENTIY SPA Day!!! Spent an afternoon/night with my HIGH SCHOOL girlfriends (including two from gr.7 .. now that's FRIENDSHIP). We swam, enjoyed relaxing services, laughed ALOT while catching up... which led us to Cactus Club where it got TUN UP on a rooftop patio ambience including a live DJ killing some 90s rNb😍😍😍🎵🎵 Perfect therapy! Reflective thought ~ God connects us with certain ppl throughout our lifetime for reasons at times we can't understand. I ain't mad with this CHOSEN GROUP of chicas I've been connected with. I’ve been cooking and baking overtime for the little ones. Tonight it was time for a lovely fish pie. The toddler started school today and it is a race to ensure he has adequate snacks and lunches to bring with him. I try to use the best ingredients I can find and make meals from scratch - it’s tiring but worth it! #homemade #healthyeats #wholefoods #undomesticatedmamma #toddlerfood #undomesticatedeats

Very true- fill your body with junk -and expect to feel like junk whereas if you fill your body with high quality fruits, veg, etc. you will radiate in greatness! It can change your whole mood and confidence when going about your day☀️eating poorly sounds great in the short term because we can quickly write it off in our minds, but can cause you to feel sluggish, unmotivated, & disconnected from your optimal way of living!! Trust me I’ve been there & its sooooo much better on the opposite spectrum! Not going to be the same with everyone, but I personally feel my best when I can control what I’m eating and know what’s going into all of my meals! 🌱 Doesn’t matter if you are vegan, Keto, low fat, high fat, paleo,yogi, crossfitter, rockclimber, runner,  etc. — we are all just trying for the same goal of reaching our own versions of optimal health & wellness! Everyone gets there at different paces and through various avenues, but at end of the day, we are all very similar in that we want to change our habits and promote better health 👍🏻🥒🥦 conscious choices make conscious people!💫

Mornings when I have time to actually sit down and eat my brekkie 😍🙌🏼💫 HA this wasn’t this morning, y’all. I was runnin’ our the door with a smoothie bottle in hand—but still was able to make it to work at my usual time👏🏼👏🏼👏🏼 This pic was Friday morn, ugh miss you, FRIDAY!! You’ll be back before I know it though. Ya always are.

Anyways, this smoothie bowl was jam-packed with my fave low-GI protein powder from @suncorefoods #ad and tbh it just felt like I was eating chocolate mocha ice cream🍦 topped with tasty superfoods like @suncorefoods hemp seeds and toasted coconut 🥥 chips! Staying fueled throughout my mornings is huge for me, so i have MUCH loOooove for a protein powder that keeps me full, energized and ready to take on the day!

For a fun twist on a pb&j, I used gluten free bread, spread almont butter on it and topped it with two slices of these magnificent green figs. 1 egg + 3 egg whites + 1 slice of Ezekiel bread (21P/17C/5F). I love getting my protein up in the morning for 2 reasons, 1 being that I don’t have to worry about protein later in the day and 2 being too many carbs first thing in the morning makes me feel sluggish. This + a cup of coffee is a simple and healthy way to start the day 😇

Today starts a new day of eating better. These past few years I’ve considered myself a good eater, and more recently a really healthy eater. However, it’s harder whenever we travel. There’s airport food (WHY is it so much fast food!? Seriously, we need healthier places in airports!), going out for food and not always finding what you want at the grocery store. We didn’t have a blender for the longest time, which meant no smoothies (we’d get one while out occasionally but it was too expensive to do everyday plus, my smoothies are WAY better). The grocery store was F-A-R (no car! We walked). So, we’d do one shop a week but that meant if something was out of stock, we were out of luck. And budget plays a huge role (though I will always say making eating healthy is a priority; which means, upping the budget!). Regardless, I’m super excited to be getting back to neutral, incorporating more plant based foods, and getting back to my daily smoothies.

honestly just grateful to have found a restaurant w anti inflammatory values while on the road!!! I got the salmon bowl without quinoa and it came w all my favorite veggies, E got the protein toast w a side of broccoli that had this dope red pepper walnut romesco so all in all a success I would say. 
we went on not one but TWO hikes yesterday and lemme tell ya guys the second one was literally basically rock climbing and I just kept envisioning myself as the lil engine that could huffing and puffing my way up lol. but that view tho #worthit
also don’t think our trip has been all hunky dory bc a sorely needed load of laundry at our Airbnb yesterday and the washing machine literally MALFUNCTIONED with all our stuff (and legit all my underwear lol) with this blinking error code and we let it sit until we came back from the farmers market but then realized like wow this isn’t going to solve itself so we had to call our host and so our half washed clothing was stuck in washing machine jail for the better part of the day. eventually they got it out but like idk guys I was v afraid bc my hanky pankies are v near and dear to my heart so that was more than terrifying if I’m being my usual dramatic self ¯\_(ツ)_/¯
we’re in Joshua tree now about to go on a morning hike (bc it’s the desert and we learned our lesson with afternoon hikes/bike rides in 110 degree weather haha) so wish me the fortitude I need to not want to die on the trail again!!!!

Did I eat food not on my nutrition plan? Yes. Am I upset with myself about it? No. 
6 months ago I would've beaten myself up over it and given up, all because I couldn't stick to the plan of "eating healthy." My view of what is and isn't healthy is very different now. I feel so much better physically, mentally, and emotionally than I did then.

Living healthy means doing what is best for body AND soul. And I will not deny myself those random nights with loved ones kicking back with a few beers and comfort food.

our fave summer salad ~ so simple and delicious! Chopped yellow pepper, cherry orange tomatoes, scallion, peaches, and sprinkled black sesame seeds over chopped spinach. Dressing was red wine vinegar, avo oil, squeezed lemon, stone ground mustard, salt and pepper (just taste as you go and add whatever more you like). If you’re looking for a filling lunch during the week, add avocado / quinoa / meat of choice and you’re good to go 🙌🏼 #cleaneats

@hellofreshca meal boxes at my doorstep was a life saver during my sick week. All I had to do is open the box, follow instructions and nyam, some veggies came chopped too 🙌🏼 Got more sleep and less meal planning, grocery shopping, emptying grocery bags, chopping and following/creating recipes. #hellofreshlife

Recipe📝
1/2 cup Raw almonds
1/2 cup Medjool dates
1 tbs Chia seeds
1/4 cup Cacao powder (@guittardchocolate)
2 tbs Matcha powder (@ujidomatchatea)
1 scoop Unflavored protein powder (@myproteinus)
1 tbs Avocado oil
1 tbs Unsweetened almond milk (@lovemysilk)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pulse dates & almonds in food processor until blended together. Add in all remaining ingredients & pulse in processor until all is combined.
Line any dish with parchment paper. Scoop out mixture & roll into bite sized balls (slightly wet fingertips).
Dust the tops with more matcha powder.
Let it sit in the refrigerator for 1-2 hours. Take our from refrigerator when ready to eat & enjoy! 🤗

I like to start off by boiling my sweet potato in some water for roughly 10 mins because I HATE cutting hard sweet potatoes. Who’s with me?🙋🏽‍♀️ After boiling it, cut into cubes.
In a pan, add avocado oil, chickpeas, & the sweet potatoes. Add soy sauce, chili powder, & garlic powder. Cook for roughly 10 mins.
For the quick & easy guac: mix avocado, pico, lime juice, and salt & pepper.
Serve on corn tortillas and garnish with fresh cilantro & sesame seeds!

🥗 Southwestern Salad Bowl

Threw this delicious #lowcarb #lowcalorie salad bowl together this morning & kept it in my lunch bag to bring to work🏃‍♀️It's simple & ready to go with just a little preparation from the night before. And it's a hot kale salad! Say whaaaat❓Because who likes rough, bitter, cold kale? Honestly, heating up this salad makes it taste so much better & the melted cheddar cheese on top is definitely a plus 🤤

What's in my bowl🥣
Handful of Kale
1/4 cup Cauliflower stems
1/4 cup Kohlrabi
1/4 cup Sweet Potato
1/3 cup Black Beans
1/4 cup Spicy salsa (@heb)
Cheddar cheese (@kraft.naturalcheese)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cube vegetables - cauliflower, kohlrabi, & sweet potato. (I like to make use of leftover stems from cauliflower & sometimes I'll throw in broccoli as well). Fill a pot with salted water & bring to boil. Add the vegetables & cook covered for roughly 10 mins.
Wash kale, chop roughly, & add to salad bowl. Add in vegetables, black beans, & spicy salsa. Mix together & heat in microwave for 3 mins to soften. Top with cheddar cheese.
(I usually mix everything together beforehand, except for the cheese & salsa. And store it in a tupperware so it's ready to take to work in the morning.)

🍛 Cauliflower Fried Rice

This cauliflower fried rice is my go-to and I probably make it at least 2-3 times a month. Super easy & so so healthy! And it’s definitely a plus that it makes a lot so I have plenty of leftovers for work 😍

Deets👇🏼
12 oz Cauliflower Rice (@greengiant)
8 oz	 Firm Tofu (any I find at the store)
4 Brown Eggs
1 Colorful Bell Peppers
Frozen Edamame
Frozen Sweet Corn
1/4 Sweet Onion
1/2 Broccoli
Handful of Shredded carrots
Sriracha, to taste (I use a bunch 😅)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Chop bell peppers & onion and cut broccoli florets from stems. Add bell peppers, onion, broccoli, carrots, edamame & corn to pan. Sauté all veggies in olive oil for few minutes (~10 mins) until soft. Set aside in another dish.

Steam cauliflower rice according to package instructions.	 Pour into pan from earlier & keep on medium heat. Push rice to the sides of the pan, leaving a hole & pour in eggs.
Mix eggs into the rice & cook for a few minutes (~5 mins). Set aside in another dish.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Wrap tofu in paper towels, press between 2 plates & microwave for 2 mins. Cut into cubes of desired size.
In the same pan, heat sesame & olive oil, then add in the cubed tofu. Sprinkle seasonings- cumin, garlic, ginger, chili, salt & pepper. Cook until brown & crispy (~10 mins), flipping as needed.

Serve veggies, fried rice, & tofu in bowl. Garnish with sesame and hemp seeds & lottsaaa #sriracha 🔥

🥒 Baked Zucchini Bites

These yummy & crunchy zucchini bites literally do not taste like vegetables. It’s a great quick little snack & it’s not even unhealthy! 🙌🏼

What’s on my plate🍴
2 Zucchinis
Parmesan cheese
Mozzarella cheese
Oregano
Basil
Parsley
Garlic powder
Olive oil

In a small bowl, mix together Parmesan, mozzarella, oregano, basil, parsley, garlic powder, salt & pepper.
Slice zucchini in half and brush on olive oil on both sides. Layer tops evenly with cheese mixture.
Bake at 350 degrees for 5-7 mins & then broil for 2 mins (until top is brown).
Top with red crushed pepper & sesame seeds! Yum 😋

Breakfast for dinner anyone? 🤷🏽‍♀️ Sometimes it's hard making a fancy breakfast when you have to be at work by 7:30 am! So I decided to make this yummy sweet potato & black bean southwestern hash for dinner tonight 😋 With some Avocado Dressing to celebrate #NationalAvocadoDay 🥑

Recipe 🔖
Avocado Dressing:
1 Avocado
1 clove Garlic
1/2 tbs Lime juice
3 tbs Avocado oil
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Potato Hash:
2 Sweet Potatoes
1/2 Onion
1/2 Green bell pepper
1 Zuchinni
15 oz Refried black beans
Handful of Spinach
2 Eggs
⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the dressing, blend together garlic, avocado, lime juice , avocado oil, salt & pepper in a food processor. Process until smooth, scraping the sides as needed & adding in water for preferred consistency.
For the hash, dice vegetables (sweet potatoes, onion, bell pepper, zucchini) & cook in avocado oil for roughly 10 mins. Season with cumin, chili powder, salt & pepper. Add spinach & cook for 5 more mins.
Serve with eggs, refried black beans, drizzled avocado sauce & @tapatiohotsauce🔥. I added sliced avocado to mine as well because you can never have too much 🥑. Garnished with, fresh cilantro, hemp & sesame seeds.
