I know it’s #toasttuesday but I couldn’t resist making @cleaneatsbytay banana peanut butter honey baked oats 🤩 They were SO delicious and I’m definitely wishing I saved some to eat as I’m at the airport waiting for my delayed flight. It’s one of those days where I’m already thinking about dinner even though I just ate lunch 😂

Spicy Chicken Stir-Fry with Egg Fried Rice 🍚🍳🍗🌶
Literally hitting all the numbers 💯
High in Protein, High in Carb (Low in Fat) 😋
Fry off fresh chilli, ginger & garlic 🌶
Add diced Chicken breast and cook till near enough done 🎲
Add in your vegetables of choice and sweat them off for a few minutes🥒🌽🍆🌶
Add in some light soy sauce and toss until coated 🍜
Plate up, ideally with a wedge of lime and fresh coriander 👨🏻🍳

Pollo en Ajo// chicken in garlic. ==============================so this week I made some comfort food and I had to dig into what I loved to eat growing up when my grandma would make “inventos” (inventions) this dish is so easy and so delicious so let’s dive into the recipe. ============================== what you are going to need: ✍️✍️✍️ ✅Chicken (I seasoned my chicken with lime salt pepper cayenne and garlic)
✅Potatoes (I used 1 large russet potato). ✅Garlic ✅Onion (I used a large yellow onion). ✅Extra Virgin Olive Oil (EVOO). ✅Cooking wine ============================== To make the chicken : Start by seasoning the chicken to taste (I’ve had mine sitting in the fridge a few days) *For better flavor in your meats let the chicken marinate for at least 20 min*. Next dice up your potatoes and onions *if you don’t like eating the actual onion a larger cut is easier to pick out but still get the flavor*. Add to your pot some EVOO and a table spoon of garlic ( if you’re anything like me there can never be too much garlic ) once the oil starts cooking the garlic add in the onions and potatoes *Potatoes tend to hog all the salt for itself so make sure you add a pinch of salt to taste* then add about a cup of wine to blend in all those delicious flavor and to act as a catalyst in steaming the potatoes. *because the potatoes are diced you only need to let them steam for 5 min if not you’ll have soggy potatoes* Once you feel like the potatoes are good to go mix in the chicken. Brown the chicken and make sure it’s cooked through. AND just like that you have some yummy food on your plate. ============================== I paired this chicken with some white rice & a banana. (Like I told my husband are you really eating Cuban food if it’s not accompanied by bananas 🍌). ============================== What are some of your favorite comfort foods?

Lasagna Stuffed Bell Pepper.
1️⃣ 4 bell peppers.
2️⃣ 1 pound of ground beef.
3️⃣ 2 cups of ricotta cheese.
4️⃣ 1/2 cup of Parmesan cheese.
5️⃣ dried oregano.
7️⃣ 1 small onion.
8️⃣ diced tomato and tomato sauce.
9️⃣ 3 cooked lasagna sheets.
👨🍳 👨🍳 👨🍳 👨🍳 👨🍳 👨🍳 👨🍳 .
1. Cut one inch off of the bell pepper or cut in half. Bake the peppers in 350F hot oven for 20 minutes.
2. In a hot pan add olive oil and one small finely diced onion until brown. Add the ground beef and cook adding salt, garlic and oregano. Add diced tomato and 5 tbsp of tomato sauce and simmer until a desired consistency.
3. In a bowl mix ricotta cheese, one egg, parmesan cheese, and dried basil until creamy.
4. Lay the meat sauce first inside the bell peppers then place the cooked lasagna sheet, cut them according to the size of the peppers. Coat the lasagna sheet with ricotta cheese mixture followed by meat sauce. Repeat this cycle to the top of the peppers. Add Parmesan cheese on top and bake the peppers in 350F hot oven for 20 minutes. .

Una buena carne a la parrilla nunca está de más. En @lagranjatenjo hay un montón de variedades de cortes. Tienen un menú muy amplio, ya que es un restaurante temático para ir con la familia, buena opción para ir con niños.
Me comí una punta de anca a la parrilla (450gr) a termino 3/4 con una salsa piqueña (tocineta , tomate, pimentón, cebolla, aromatizada con cilantro); viene con un acompañamiento de papas criollas y aborrajao. Sentí que la salsa le quitó protagonismo a la carne y estaba un tanto dura, aún así estaba riquísima.
De entrada pedimos para picar una porción de chorizos que estaban buenísimos 🤤.
1️⃣ Punta de anca a la parrilla: 41.900.
2️⃣ Porción de chorizos: 16.900.
Puntuación general: 8.5/10.

As I said a few posts ago one of my goals over the next few months is to increase the variety of my diet and try to introduce old favourite meals of mine back into my life!
It is challenging to step outside my comfort zone but at the same time it has been making me feel so liberated and happy!
I feel like I am finally starting to value and accept my body as it is, while working on building a healthier, stronger me.
You see quotes all the time about how self-acceptance is the building block for everything else, and I think I am finally starting to believe it, and genuinely want to live by it.
I always thought being harsh on myself would get me the furthest but now I know that’s far from the truth!
Respecting our bodies and truly wanting the best for them is where the magic happens.
I hope you can remember this today as well 😘

Im a little disappointed 😔
The truth is, the results aren’t what I was hoping for. Worst than expected to be frank. But you know what, I’m so grateful to @verisana_lab for allowing me to take this test so I can finally verify any assumptions I had regarding my health- I’ve finally been able to see exactly how my hormone and gut levels check out. Remember a few months ago when I self diagnosed myself with a Candida overgrowth? My reasonings were solely based off of symptoms I was experiencing, but nothing factual like a stool sample test. After getting my results back from @verisana_lab I found out that I do in fact have an overgrowth of Candida albicans residing in my gut...still. Though, I think I was off to a good start with the protocol I was following a few months back and was experiencing positive results, I don’t think it was quite long enough to kick it to the curb. Sometimes, it can take up to 6 months to really get rid of Candida depending on the severity, and judging by the look of my C. Albican levels and the amount of antibiotics I’ve been on in my life, I wouldn’t be surprised if this takes a while to beat. But, I’m determined to get rid of it once for all and share my journey yet again in hopes of helping anyone else dealing with the same thing. Will be sharing more of my actual results on stories sometime this week for anyone interested. Here to help anyone struggling and thinking of doing a whole 30 soon for a little reset. Anyone want to join me? Never hurts to have the extra support and accountability ♥️
