Handmade spinach tagliatelle 🍝 with a pesto of raw zucchini, pistachios and fresh herbs 🌿🍀
I made this healthy sauce one day when I had a handful of basil, but it wasn't enough for a basil based pesto, so I had the idea to add a green veggie, easy to finely blend, with a delicate flavor to avoid any competition with that of basil.
And because I didn't have pine nuts, but pistachios, here is another variation to the traditional ligurian pesto. In the end I decided to do without parmesan too!!
So it's vegan, it's raw, it's very fresh. You can try with mint instead of basil and it'll be a great as well 🥒🌱🌿🌺

Black beans, kidney beans, courgette, mushrooms, corn, peppers, carrots, celery and onion cooked in passata with cumin, coriander, thyme, smoked paprika, cayenne pepper, fresh red chilli, chilli flakes, coffee, cacao, coconut sugar and lime juice, finished with fresh coriander and served with brown rice.
