Keto Apple rhubarb cobbler made with Chayote squash and rhubarb. Macros 18 carbs 70 fat 54 protein 985 calories for entire batch. You will need 2 Chayote squash that have been peeled and chopped, 1 cup rhubarb, 1/4 cup water, 2 tablespoons cinnamon, 2 drams of apple flavor, 1/2 cup sweetener. Cook it for 10 minutes till it’s soft, remove from heat and add 1/2 teaspoon xanthan gum to thicken it. Topping 1/4 cup casein protein, 1/2 cup oat fiber, 1/4 cup vital wheat gluten, 1/4 cup sweetener, 6 tablespoons unsalted butter at room temp. Combine the dry add the butter and combine in large pieces put in fridge and preheat oven to 400 .Place cooled filling in a dish and top with crumb mixture. Bake at 400 for 40 minutes cover with foil if it browns too quickly. Wonder what this is? The highland vine vegetable. Not many know about this in the plains but for a highlander like me it’s a prized vegetable. We call it ISKUSH, a corrupted version of the English people who called it Squash, more popularly known as Chayote.
Have you ever eaten raw chayote squash? I never eat it raw until this dish. Before that I mainly used this chayote in soups and stir fry and always peeled. Now I know raw chayote tastes like an apple with a crunchy texture that's not sweet at all. Swift⬅️ to see how chayote like.
Chayote and apple salad is a Thai salad. It's something like som tum (papaya salad) , which requires pounding everything (except the chayote and apple) in the mortar and pestle. As a result, everything is saturated with that taste of the dressing. This recipe contains with fish sauce and dry shrimp. You can replace the fish sauce to soya sauce and skip the dried shrimp. Then it will be a vegetarian salad

Today we focused on nutrition and working out was extra credit and tons of fun with little sister and my little man. We ate yummy food we enjoyed and I didn’t feel starved at all. .
Water first, veggies most, followed by protein and then carbs/fruit except at dinner. 🙈 Knowing how to eat instead of just what to eat made it so simple to stay on track.
Best part... it’s as simple as you want your meals to be or as complicated as you desire. I am all about simple so today we sautéed some Brussels sprout, chayote squash with onions and garlic and topped it with some over easy eggs. .
