L'evaporatore rotante è un'apparecchiatura utilizzata comunemente per allontanare i solventi da una soluzione di un composto d'interesse, tramite evaporazione a bassa pressione. Il nome comune dello strumento è "evaporatore rotante", a cui ogni produttore dà un suo nome identificativo (ad esempio Laborota è il nome degli evaporatori rotanti prodotti dalla Heidolph Instrument, Rotavapor quello assegnato dalla Buchi). È costituito da cinque elementi principali:

un pallone di evaporazione contenente la soluzione da evaporare

un bagno termostatico, in cui si immerge il pallone di evaporazione per mantenere la soluzione alla temperatura opportuna

un meccanismo motorizzato, in grado di mettere in rotazione il pallone di evaporazione

Carrillera de cerdo con puré de tubérculos

INGREDIENTES

Para 4 raciones

Para la carrillera

4 carrilleras de cerdo
1 zanahoria
1/2 rama de lemon grass
100 g de jengibre amarillo
1 puerro
500 ml de caldo de cerdo
Para la crema de taro

2 taros
1/2 l. de leche
1/2 l. de nata

ELABORACIÓN

Cocción de la carrillera: metemos todos estos ingredientes limpios, pelados y preparados en una bolsa de vacío y los cocemos 10 horas a 89 ºC a vapor.

Crema de taro: pelar el taro, trocearlo y cocerlo en la leche y la nata hasta que esté cocido, tierno. Hay que ir comprobando (20-30 min aprox). Una vez cocido trituramos durante 5 min en la Thermomix.

Terminación: hacer una lágrima en el fondo del plato con la crema de taro y colocamos la carrillera encima con su jugo. •
