Sugar free Pad Thai with courgetti/zoodles. Adapted from @theblendergirl recipe. I put a big dollop of tahini in the sauce and it was delicious ๐Ÿคค Itโ€™s easy to reach your 7/8/10 a day, whatever your goal is, with recipes like this. Courgette (lovely yellow ones too from my @barcombeorganic box), spring cabbage, carrots, spring onions and herbs make up the bulk of this meal - with added coconut aminos, sesame seeds, peanuts and prawns for plenty of protein. Garlic, ginger, lime, and a good slug of sesame oil. The sweet for the sour comes from a little maple syrup, and @redboatfishsauce for salty umami

I always load my salads with spinach - best eaten raw (25% of Folate can be lost through cooking), or sautรฉed - it is a fab green vegetable to eat daily. Add some heathy fats by sprinkling with seeds and olive oil, some feta cheese for protein and a slice of Rye bread ๐Ÿ˜‰

Even now the thought of borscht makes me feel queasy! But over the years (middle one is now 11), itโ€™s crept back in and with recent reports on its benefit in the fight against dementia, and another birthday fast approaching, Iโ€™m ready to tuck in. My recent trip to Ibiza opened my eyes to beetroot houmous which always just seemed weird - why mess with the regular perfect mix?! - it was so delicious (thanks @grandpalladiumibiza ) that I am converted. So, hereโ€™s my first attempt. Kids not sure but that could change, right?!

I decided to make aubergine parmigiana for dinner after finding aubergines on offer for less than 50p each at @lidluk ๐Ÿ† I drizzled sliced aubergines with olive oil and roasted them in the oven until soft. I made a simple tomato sauce with red onion, garlic, oregano and chopped tomatoes, then layered the aubergines and sauce before topping with organic Cheddar and Parmesan. Smoked Mackeral Fennel Slaw

Lay out leaves of Little Gem lettuce into a plate.  In a bowl grate a fennel and a carrot.  Slice and add to the bowl 3 or four radishes, a spring onion and the zest of half a lemon.  Flake a smoked mackeral fillet into the mixture and stir.  For the dressing, add a tablespoon of olive oil, a teaspoon of cider vinegar, half a teaspoon of Dijon mustard, juice of half a lemon ๐Ÿ‹ and season with salt and pepper. Homemade coleslaw never gets dull for me - it says summer and vitamin D and vitality. But I do try to mix it up so no one else gets bored. More like a remoulade here with a dollop of Dijon and some lemon juice, and a good handful of capers for extra zing. .

An easy way to get a whole lotta veg in - a simple stir fry. ๐Ÿฅฆ
Put the tougher stuff in first - broccoli, carrot, and onion, and the softer greens like bok choy and spring greens, and aromatics like chilli and garlic in a little later.
๐Ÿฅ• 
A few dashes of tamari soy sauce (regular soy sauce isnโ€™t gluten free, if thatโ€™s important to you). I also added some mirin, some black sesame seeds, a dash of fish sauce (its fermented, so good for the gut, and adds that lovely umami depth) and a little toasted sesame oil. Perfect topped with a piece of grilled fish.

Dr Xand van Tulleken reminded us that "green carbs" such as salad greens and lentils are generally significantly healthier than "beige carbs" such as pasta and potatoes, and "white carbs" such as rice and biscuits. Most of the starch and sugar in these beige and white carbs are broken down into glucose for energy too quickly and cause energy ups and downs. Now the warmer weather is here we are loving hearty smoothies for breakfast.
They are such a great way to pack in a good dose of fruit and veg before we even head out of the door on a morning.
We make our smoothies hearty affairs by adding in oats, vegan protein powder (no nasties just Pea protein) and nut butter! This mornings smoothie was frozen cauliflower (trust me, it adds the creamiest texture to a smoothie and you donโ€™t taste the cauliflower flavour), banana, spinach, frozen berries, a good dollop of organic full fat yoghurt, a dash of cashew milk and a handful of oats. Whizzed up in the @nutribullet and sprinkled with some crunchy muesli for added crunch! 
Smoothies are a great way to get well on your way to the recommend 10 portions of fruit and veg a day and the girls love them!
