Chickpea passato. Usually the chickpeas are puréed or smashed; these were left whole and sitting in one of the best Parmesan broths I’ve tasted. A bit of kale rounded out the dish nicely. Not pictured: yummy salad with roasted mushrooms and pine nuts. .
