What’s it’s story, you ask? Well, like all cocktail history, the origins are always a little hazy but the Knickerbocker first appeared in Jerry Thomas’ The Bartender’s Guide (1862). It initially was served with St. Croix rum and the cocktail evolved with the times with different variations. Think of this cocktail as a precursor to the traditional Mai Tai.
Knickerbocker - est. 1862
1 oz Plantation 5yr
¾ oz Raspberry syrup
½ oz lime juice
½ oz PF dry curacao
¼ oz Smith and Cross
Mount all ingredients in a mixing glass. Dry shake. Strain into a lowball with crushed ice. Garnish with a raspberry and lime zest.
