Had this ONE-POT CURRY VEGGIE RICE🍛 2 days in a roll (Recipe👇) I love using warm spices to create fall recipes🍂 It's so tasty and it makes me feel warm from the inside out.🌞
This recipe is OIL-FREE, and super easy to make. As you can see from the name, all you need is one pot🍴 You can also switch up the veggies and beans to whatever you have in hand! It's so sooo gooooood~~👌 Have a wonderful Saturday folks💓

dEats🍛 🔸1 1/2 cup sushi rice
🔸1 cup coconut milk
🔸2 cups veggie stock (no salt added)
🔸19oz chickpeas
🔸2 stock celery sliced
🔸1/2 onion sliced
🔸1 carrot (diced)
🔸125g broccoli (cut into florets)
🔸3 tsp curry powder
🔸1 tsp garam masala
🔸1 tsp turmeric
🔸1/4 tsp dry chilli flake
🔸3/4 tsp himalayan salt

Directions🚩

1. Fry onion, carrot, celery, dry chilli flake in a little bit of water for 5 minutes on high heat. (add water little by little so the veggies caramelize)

2. Add broccoli and spices, stir fry for another 3-5 minutes on high heat until the spices are infused into the veggies.

3. Add coconut milk, veggies stock, salt, rice, chickpeas. Stir until everything is well incorporated.

4. Bring mixture into a boil, cover with lid, simmer for 20 minute. Enjoy! •
